Ingredients

  • 1 small cabbage (450 g or 1 lb)
  • 2 medium zucchini (300 g or 10.6 oz)
  • 1 onion
  • 1 medium sweet potato (approx. 130 g or 4.6 oz)
  • 4 garlic cloves
  • 30 g basil
  • 30 g coriander
  • 15 g parsley
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 1 l bone broth or water
  • 1 tbsp olive oil

Directions

Total time:45min
  1. Step 1:

    Place the olive oil in a deep pan on medium heat. Add the chopped onion and crushed garlic. Fry for 5 minutes until the onion starts looking translucent.

  2. Step 2:

    Shred the cabbage, slice the zucchini, peel and chop the sweet potato.

  3. Step 3:

    Add all the vegetables and stir fry for 5 minutes. Add sea salt, pepper, herbs, and cover with water or bone broth.

  4. Step 4:

    Bring to a boil and simmer for 30 minutes.
